Seven Ingredient Gluten-Free Protein Pancakes (Fast & Easy!)

I was looking for a morning meal that was packed with protein and didn't include wheat or grain products (feel free to ask why or discuss that in the comments), but that was still filling enough to hold my appetite in check for a few hours.  I needed something that I could cook in advance and store in the fridge for a day or two.  Originally based on a recipe from Catalyst trainer Fabian Cabera, after a few weeks of experimentation,  my recipe turned into a healthy PANCAKE!   With ~20 grams of protein and ~40 grams of carbs, these pancakes aren’t just a great breakfast--they also make for an excellent post-work out meal!   http://res.cloudinary.com/display97/image/upload/64008.jpeg

Ingredients:

  1. 4 Eggs
  2. 4 Heaping Tbsp of Coconut Flour (You can use almond flour but it absorbs less water so you may need to adjust wet ingredients)\
  3. 1/2 Cup of Almond Milk
  4. 1 Banana
  5. Cinnamon (add to your tastes. I love it so it goes both into the mixture, and then on top while the pancakes cook)
  6. 1 Cap full of Vanilla Extract
  7. Grass Fed Butter

Cooking Instructions - Serves 10-12 3-4" Pancakes

  1. Pre-heat pan with medium to medium-high heat and grease with butter (coconut oil can be used here if you don't want to use butter). 
  2. Put Eggs, Almond Milk, Vanilla Extract and Banana into a blender and blend on low.  
  3. Add 1 or 2 TBSP of flour and blend again low.    
  4. Add remaining flour and continue to blend.  Add more if the batter is too liquidy.
  5. Pour batter into pan. Only make 3 to 4 inch size pancakes because they tend to be a little flimsy.  
  6. I like to add more cinnamon here.
  7. Flip once bubbles start to pop through pancake.  
  8. Remove after 1-3 minutes depending on your taste.
  9. Let cool, then eat!
